Hope Danielson from County Market joins us in the kitchen to show us how to make Pumpkin Energy Bites.


Pumpkin Energy Bites

Should make approx. 20 bite-size balls

Ingredients:

2 cups dry, uncooked old fashioned oats

1/2 cup nut butter or sunflower butter

1/2 cup pumpkin puree

1/4 cup ground flaxseed

1/4 cup honey

1 tsp. vanilla extract

1/2 teaspoon pumpkin pie spice

1/2 cup mini chocolate chips

Directions:

Mix all ingredients except chocolate chips together in medium bowl.

Chill for 20 minutes

Add the chocolate chips and stir to combine. Form bite size balls by rolling a spoonful of the mixture in your hands. Place in airtight container and refrigerate for up to a week.

Tips:

You may need to add extra oats if mixture is too sticky to roll.

You can freeze these bites in a freezer bag or container.
